This recipe with ham and egg muffins sounds easy and delicious:

Preheat oven to 400 degrees. Spray your muffin tine and lay your ham out to cover the bottom of the tin. Add your egg in (I have even lightly scrambled it prior to putting it in the cup), and whatever additions you want to add (onion, green pepper, mushrooms, cheese). Add salt and pepper if you choose. Bake for 12-15 minutes. 12 minutes will give you a yolk that is still a little 'wet' and 15 minutes will cook it through to a hard boiled stage.
The ingredients I found in the description are as follows: 1 10 oz box broccoli and cheese sauce, 1 can flaky layered biscuits, 10 eggs, 1 1/2 cups milk, 1 tsp. mustard, 2 cups diced ham, 1/3 cup chopped onion, 1 cup shredded cheddar cheese.
